Method (Ohje)
- 1.
Warm and bloom. Warm the milk to about 110°F. Stir in the yeast and a pinch of the sugar; let it stand until foamy.
- 2.
Mix. Whisk in the rest of the sugar, the egg, cardamom and salt. Add the flour in four additions until a soft, shaggy dough forms.
- 3.
Knead in the butter. Knead in the butter a piece at a time, then 8 to 10 minutes more until smooth and slightly tacky.
- 4.
First rise. Cover and let rise somewhere warm until doubled, about 1 hour.
- 5.
Braid. Divide into 6 pieces and roll each into a 14-inch rope. Make 2 three-strand braids on a lined sheet.
- 6.
Second rise. Cover loosely and let rise until puffy, 30 to 45 minutes. Heat the oven to 375°F.
- 7.
Glaze and bake. Brush with egg wash, scatter pearl sugar and almonds. Bake 20 to 25 minutes, until deep golden.
